Diet and oxidative stress: sources of lipoperoxidation and the means to protect against it
After briefly reviewing lipoperoxidation pathways, this article discusses the formulation of “oxidative” versus “antioxidative” diets. These two types of diet have been documented by a series of studies involving the measurement of peroxide and antiperoxide activity in a variety of foods (oils, fats, meat, processed food, fruits, and vegetables). It was determined that it is possible to counterbalance a food source rich in reactive oxygen species with one consisting of fruits or vegetables capable of eliminating those species, thereby helping to maintain a better physiological balance.
